How to Cut a Pineapple

So I get this weekly email about dinner ideas...its nice not to have to think all the time :) I just sat down to catch up on my emails and found this very helpful! Its spring...so its time to take advantage of fresh fruits and veggies. I tend to buy the same thing. I get intimidated by some fruits because I have difficulty cutting them ie: mangos and pineapples. No worries, here's a great demo on How to Cut a Pineapple.

Well, no more excuses...I will be buying some pineapple tomorrow at the store. So excited!

Double Delicious Lo Mein

I've been ravening about the dinners from Double Delicious my whole family loves so I figured I'd share a great recipe. We had this for dinner tonight and everyone made "Clean Plate Club" Enjoy!

Lo Mein
1 (12-oz) box of whole wheat spaghetti
1/2 c low-fat, reduced sodium chicken broth
1/2 c sweet potato puree
2 T of reduced- sodium soy sauce
1 T of brown sugar
1 t of sesame seed oil
2 t of cornstarch
2 T of olive oil
3 cloves, garlic
4 green onions, white ends only
4 center-cut pork chops trimmed of fat and cut across the grain into 1/4 inch-thick slices

Cook spaghetti. In medium bowl, whisk the 1/2 cup of chicken broth, sweet potato puree, soy sauce, brown sugar, sesame oil, and cornstarch. Set aside.

Heat olive oil in large skillet over medium heat. Add garlic, green onions, and pork. Cook until garlic and onions become fragrant and the pork begins to brown, 4 to 5 minutes

Add soy sauce mixture and spaghetti to the skillet. Reduce heat to low, stirring well to make sure sauce coats all noodles, cook about 3 minutes.

*I add steamed shredded carrots, sugar snap peas, and mini corn.

How to Clean Winter Stains

Picked these little tidbits from The Accidental Housewife on Kathy Lee and Hoda.  Good info with all this yucky weather floating around...

How to get salt marks off of shoes:
  1.  Wipe off shoe with dry cloth
  2.  Make mixture of 50% vinegar and 50% water
  3.  Dab mixture on spots and leave overnight
  4.  In the morning, use Vaseline to tender leather.  Use tree horn.

How to get salt marks off of Uggs
  1.  Nail file will actually take off a small amount.  Just file lightly
 If file does not work:
  1.  Dab a little milk on spots and leave overnight
  2.  Stuff balled up newspaper into foot of boot to help with shape and to absorb any moisture

Also, in these winter months our furry family members might not be getting outside as much as we or they'd like and we might have a few accidents here and there.  So, to remove urine stains:
  1.  Take toothpaste and toothbrush and using toothbrush work toothpaste into soiled areas
  2.  Leave overnight
  3.  Dab away with wet cloth

Home Safety Plan

I feel like every time I watch the news (which is very rare!) there is another house that burn down :( So let's get some home safety tips out there.

1. Have a working smoke alarm on each level of your house! Change the batteries and vacuum the units at least twice a year. I normally recommend when the time changes...its an easy way to remember.
2. Install a carbon monoxide detector in common areas of your home.
3. Have a fire extinguisher in your home, know how to use it. Make sure its easy to lift and operate.
4. Know the location of the fuse box and the main shutoff valves for the water and gas lines of your home.
5. Make sure you have a family escape plan. designate a safe meeting area away from your home once evacuated.

These 5 steps should help in case your home is ever in an emergency. Keep in mind to stay calm...be safe!

Resolutions of Organizing the Small Stuff

Thanks Emily for the great organization post!!  I know it will help me try to dig my way out of 2010 and bring 2011 in with a clean and organized bang!

Since the turn of the new year, I've been thinking about resolutions and how I envision this year to go.  Along with ringing in 2011, which is a natural time for most to be both retrospective and prospective, I have my 34 birthday and my daughters 1 year birthday this month.  And whew, it's causing a heap of "spective-ating", both retro and pro. 

So all these milestones (some would say 34 is not a milestone birthday, but I say any birthday is a milestone birthday) have really caused me to say to myself - how do I want this year to go?  Last year went pretty well with having the baby and, of course, the creation of The Jones/Willey Team.  I feel good and positive about both those things.  I absolutely know both Jones/Willey Team and Bea are going to have a great year.  But looking back, what I find lacking is this organization thing.  And not organization of the big things, like the aforementioned baby and job.  More keeping up with these little things around the house and in my life.  The non-consequential things... the things that don't have to get done "today".

For example - for months I have been noticing cobwebs above the window in my bedroom.  They annoy me to no end.  No matter what I've done that day, the moment I crawl into bed and look up and see them, I feel like any success is just a little incomplete.  Because there the cobwebs are.  Every night.   Mocking me.  Telling me "you just can't keep it all together"  And every morning, I wake up when the baby cries at 6:30 am and stumble out of my bedroom in the dark, one eye open, thinking about all the things coming with the new day - what am I going to dress Bea in... what calls I need to make.... what I'm going to cook for dinner.  Not one thought about those cobwebs.  I will not think about those cobwebs until the day is over and I crawl wearily into bed.  Only to have them mock me for one more night.

So, my resolution:  Figure out organizing the small stuff.  How?  Emily's tips below are a great way and I intend to follow those.  But I've also incorporated the "List System".  I did this "BB" (Before Bea) when I worked commercial real estate 9 to 5.  And I've done it a little over the past year, but I resolve to incorporate The List back into my daily life.  As I think of these little things I need/want to get done I number them and write them in a list every day.  I keep the notebook on the counter so it is easily accessible and also serves as a reminder.  As I have a minute or two here and there, I will do #3 (sew a button back on Bea's overalls) or #7 (cancel eye doctor appt for next month) as time allows and cross it off my list.  When I wake up in the morning, I move the things not crossed off from the previous days list to the new days list and start anew. 

Now, all this might seem basic to some of you, and all of you might have been doing this for years and I'm just the fool that's showing up to the party now.  But it's made me have a positive outlook for the year and feel like I can control some of the small things.  At the very least, my list made me remember one thing last night: take my duster to bed.  And this morning, with a sense of accomplishment, I crossed #5 - Remove Cobwebs - off The List.

Organize Your Home

Its the New Year...and like many of you our house is full of many new gifts we received over the holidays. After all of my holiday decorations are put away, the house gets a good clean...then the organization begins! So I wanted to share some tips if you're feeling up to the challenge.

First, start with an area of your house that needs the least attention, and leave the most important room until last. This will help you stay focused until your done.

Remove the Clutter! Determine the items purpose when deciding what to keep. We have a 1 year rule in our house. Not used in a year it goes! Set small goals, so you'll feel less stressed.

Teach children to be organized. Install low shelves so they are able to put away their books and toys themselves. We use baskets in our house. Its so easy to toss in the basket and a quick clean!
